Ingredients

Salad

  • 2 stalks kale
  • ½ cup chopped broccoli
  • 1 tbsp dried cheries
  • 1 tbsp salted cashews

Dressing

  • 1/2 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tbsp maple syrup

Instructions

  • Remove the kale leaves from two to three stalks after washing.

    From that lemon, add 1 ½ teaspoons of lemon juice to the zest.

    Dijon mustard, and salt & pepper to taste after that.
    Blend well.
  • About 10-15 minutes before serving, drizzle dressing over the salad's components.
    Toss.
    Add 1-2 Tablespoons of chopped salted cashews and 1-2 Tablespoons of dried cherries just before serving.
