Next, prepare four cups of all-purpose flour by sifting it through a strainer into a large mixing bowl.

After adding in two tablespoons of granulated white sugar, one tablespoon of unsweetened natural cocoa powder, three teaspoons of baking soda, and one teaspoon each of salt and ground cinnamon, mix these dry ingredients together until they are well combined.

Finally, add six tablespoons of softened salted butter (or margarine), followed by five beaten egg yolks.

  • 40 grams cocoa powder 1/2 cup
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder

  • 90 grams brown sugar 1/2 cup
  • 50 grams caster sugar 1/4 cup
  • 115 grams unsalted butter 1/2 cup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 180 ml buttermilk 3/4 cup
  • 110 grams chocolate chips 3/4 cup


  • Line a 9-by-5-inch loaf pan with baking or parchment paper. Preheat the oven to 180°C (350°F) / 160°C (320°F) fan-forced.
  • Sift together the flour, cocoa, baking soda, baking powder, and salt in a large mixing bowl. Stir in the sugars gently.
  • Microwave the butter in a large heatproof bowl for 20 seconds at a time, stirring in between. Whisk your vanilla and eggs into your butter until combined.
