Cowboy Steak is a flavorful cut of beef made by taking a thick top round, cutting it in half, and removing all the fat. It must be tenderized after cooking because it is not naturally tender.
It is a meal that is easy to make, and when done right, it nourishes the body. The only ingredients necessary to prepare it are a chunk of ribeye or other tender cuts of beef, an onion, salt & pepper, and a fire.

Then, you can start a fire and wait until your coals reach between 400 -500 degrees F.
Grill one side of the steak for 7 minutes on medium-high heat, then turn it over and grill another 4 minutes on medium-high heat.
After that, you can move the steak to a cooler part of the grill to grill for another lesser minute until done, depending on how well you like your meat cooked.

How to cook a cowboy steak on charcoal grill
In this recipe, I will be using mesquite wood chips. You want to be careful with wood chips. They like to pop and spit; dont get burned by them.
Here is a step by step guide:
1. Season your steak. Rub the Cowboy Steak Rub all over it, then let it sit for 15 minutes at room temperature to help the seasoning blend in.
2. Fire up the grill and heat some coals over high heat until they’re gray and mostly ash-covered. Ideally, you want to cook with medium-high heat, between 350-400 degrees F.
3. Brush the hot cooking grates with oil to rid them of any built-up residue, then put your meat on.
4. Grill each side for about 2 minutes for medium-rare, give or take about 30 seconds depending on how thick and hot your fire is (if you’re using a gas grill without a lot of different temperature settings, around 350 is fine).
Cooking a Ribeye steak on charcoal grill
1. Fire up your charcoal grill. Light your chimney starter full to the top with Kingsford Charcoal Briquets.
2. Clean and Oil your Grill. Do this before cooking. It allows for easier cleanup after cooking and will ensure that whatever you cook on the grill, these charred bits of meat, fish, or vegetables will not stick to the grill grates.
3. Seasoning Meat for Cooking is Very Important The seasoning of the meat is another very important step in making a great-tasting steak. Be sure to use a good cut of beef like Ribeye or Sirloin Steak. Ribeye steaks have more marbling than Sirloin. Marbling produces more flavor and is more tender than lean cuts like Sirloins or T-Bones.
4. Get your Charcoal Hot! Put about ten charcoal briquets into each side of your cooker, which should get it up to at least 350 degrees F.
5. Put your steaks on the grill! Once you place steaks onto your grill, close the lid and let them cook for perhaps five minutes on each side, as this depends on how soft you want them to be

How to cook cowboy steak on gas grill
First, get some steaks. I recommend a ribeye steak because it has good fat content, and the marbling makes for a delicious steak. Second, season the steaks with sea salt and cracked black pepper. Please don’t overdo it.
1. Set your gas grill to a high setting
2. Prepare your ingredients, such as onion, chef’s tenderizer, garlic salt, and black pepper, and lemon juice –
3. Place each ingredient on 2 slices of cowboy steak (1 per slice). Allow the beef to marinate for 15 minutes with an internal temperature of 160 degrees Fahrenheit
4. Turn your grill to the highest setting; the ideal temperature range should be 450 up to 500 degrees Fahrenheit.

Grilling time always depends on the thickness of the cowboy ribeye and whether or not you have allowed the meat to warm up to room temperature before grilling. These are general guidelines. Use tongs or a fork to press an internal area near but not touching a bone to test for doneness. It should be somewhat firm but yielding.
But in general, you can grill a cowboys steak anywhere from 6-10 minutes per side, depending on the heat of your grilling machine.
If you want your steak for medium-rare and remove it from the grill at an internal temperature of 130 degrees, then 5 minutes per side will do the trick. That comes out to 10 minutes total.
For example, if you like your steak medium-well done, you will cook the steak for about 5 minutes.
How to cook a 3 inch thick ribeye steak
A 3 inch thick Ribeye steak, depending on the size and age of the cow, can range from 7 to 12 ounces.
The first thing is to put your grill is between 300 and 400 degrees Fahrenheit. For an accurate temperature and reading, use an infrared thermometer.
How to cook a 3 inch thick ribeye steak? Place the meat on a rack in a roasting pan, fat side up. Cover it lightly with foil and place in the oven at 450 degrees F. Roast 16 minutes for each pound (this will make your medium-rare steak). Remove the foil, then continue roasting until the desired intensity of doneness is reached.
However, cooking 3-inch thick steak sous vide is as easy as cooking an inch-thick steak. It will take you 8 – 10 hours. The means that it won’t cook as fast, and you will have to flip it more frequently. But the result will be equally tender, flavorful, and evenly cooked.

The calories in a ribeye steak will depend on the serving size. Typically, a serving of meat is 3.5 ounces, with 136 calories. For example, a 6-ounce ribeye steak contains 252 calories (96 over your recommended daily caloric intake) and 17 grams fat.

- 2 pound bone-in rib-eye steak
- 1 tbsp Coarse salt
- 1 cup ground black pepper
- 1 cup Safflower oil
- Allow steak to rest for about an hour at room temperature. Set the oven’s temperature to 425. To medium-high heat in a grill pan.
- With paper towels, dry off the meat. Sprinkle plenty of salt and pepper on the steak. To avoid browning, wrap foil around any exposed bone. Place the steak on the grill pan after coating it with safflower oil and rubbing it in. Grill for about 5 minutes, flipping the steak halfway through to create crosshatch marks. When the steak reaches 125 degrees for medium-rare, transfer it to a baking sheet with a wire rack and finish cooking it in the oven for 12 to 14 minutes. Before slicing and serving, remove steak from oven and allow to rest for 10 minutes.
- Alternatively, if using a gas grill, allow the steak to rest for about an hour at room temperature. With paper towels, dry off the meat. grill to a medium-high temperature. Sweep lightly with oil while the grill is hot and scrape with a grill brush. Place steak on grill, covering exposed bone with foil to prevent browning and liberally seasoning both sides of the meat with salt and pepper. Cover the grill, cook the steak for about 5 minutes over high heat, turning the steak once halfway through to create crosshatch marks, then flip and repeat. For medium-rare, switch to indirect heat and continue to cook the meat for an additional 6 to 7 minutes per side, flipping once (125 degrees on an instant-read thermometer). Before slicing and serving, remove off the grill and allow rest for ten minutes.
