  • 4 medium sweet potatoes
  • 1 tablespoon olive oil extra virgin
  • 1 cup yellow onion finely diced
  • 1 cup green bell pepper finely diced
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 tablespoon yellow mustard
  • 1/4 teaspoon red pepper flakes

  • 1/4 cup coconut aminos

Instructions

  • Preheat the oven to 400°F.
  • Clean and dry the sweet potatoes. With a fork, pierce each sweet potato several times. Place the sweet potatoes on a foil-lined rimmed baking sheet. Bake for 45 minutes, or until the potatoes are tender.
  • Meanwhile, in a large skillet over medium-high heat, heat the oil. Cook until the onions, bell pepper, and garlic are slightly tender, about 4-5 minutes.
  • Cook, breaking up the ground beef with the back of a spoon, until the meat is browned and cooked through (no longer pink), about 7 minutes more. While browning, season with salt and pepper.
  • Cook, stirring constantly, until the tomato paste, mustard, chili powder, and red pepper flakes are well combined.
  • Cook, stirring constantly, until the coconut aminos have reduced.
  • Remove from the heat, cover, and keep warm until the potatoes are done.
  • When the potatoes are done, remove them from the oven and cut a slit in the top of each one. Stuff with sloppy joe mixture and serve.
