Ingredients

  • 4 chicken thighs boneless, skinless, cut into 1" cubes
  • ½ cup all purpose flour
  • ½ cup cornstarch
  • ½ tsp baking soda
  • ½ cup ice cold water

Honey Butter

  • 4 tbsp butter
  • 2 tbsp white sugar
  • 2 tbsp soy
  • 2 tbsp honey

Instructions

  • Heat about 2″ of oil in a large skillet over medium-high heat.
  • In a large mixing bowl, combine the chicken, flour, cornstarch, baking soda, and ice water and toss to coat evenly.
  • Place the chicken pieces carefully in the hot oil and fry for 8-10 minutes, flipping halfway through, or until golden brown and crispy on both sides. As a reminder, the chicken should be 165°F in the center. Depending on how hot the oil is, the chicken may cook faster, so check the temperature if it begins to brown.
  • Keep the fried chicken warm by draining it on paper towels.
  • In another skillet, combine the butter, white sugar, soy sauce, and honey. Stir frequently over medium heat until bubbly.
  • Allow to bubble for 1 minute before removing from heat.
