- 2 tablespoons vegetable oil
- 1/2 yellow onion
- 1 bell pepper
- 1 jalapeno pepper
- 15 ounces tomatoes
- 1/2 cup tomatillo salsa
- 3 garlic cloves
- 2 tablespoons flour
- 2 teaspoons chipotle chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 cups whole milk
- 2 tablespoons tomato paste
- 1 tablespoon red wine vinegar
- 2 cups cheddar cheese
- 1 tablespoon lime juice
- 1 tablespoon lemon juice
On medium-high heat, add the onion, bell pepper, and jalapenos to a large dutch oven. Cook for 5–6 minutes, turning regularly, or until softened.
Mix thoroughly before adding the tomatillo salsa, garlic, flour, cumin, oregano, chilli powder, and canned tomatoes and chilis.
Whisking vigorously after adding the milk, add the tomato paste, vinegar, and cheese; continue whisking until the cheese is melted.
Juice from the lime and lemon should be whisked in just before serving.
