Ingredients

  • ¼ cup olive oil
  • 3 ripe avocados peeled and pitted
  • 3 tbsp unsalted butter melted
  • 2 cups whole wheat flour
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 1 egg
  • 1 tablespoon water

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • In a bowl, combine the olive oil and melted butter until well combined. Set aside.
  • Add all dry ingredients into a large mixing bowl and mix well.
  • Using a hand blender or food processor, blend together 1/4 cup of the melted butter mixture, eggs, and water until smooth.
  • Stir the wet ingredients into the rest of the dry ingredients until just mixed.
  • Spread batter evenly onto a greased 9 x 13 inch pan lined with parchment paper or aluminum foil.Bake at 350 degrees Fahrenheit for 30 minutes.
