- 11/4 pounds chicken hearts
- 1 tbsp olive oil
- 1 onion chop
- 5 garlic cloves,
- 1 cup dry red wine
- 1 teaspoon salt
- 1 tablespoon dried thyme
- 1 bay leaf
- 1 pound tomatoes
- ¼ cup fresh parsley leaves
Wash the chicken hearts thoroughly before chopping them into small pieces.
Then add them into a pot along with the remaining ingredients except tomatoes.
Cover the pot and let it simmer over medium heat until the liquid reduces slightly.
Add the tomatoes once the sauce starts boiling again. Simmer everything for another 10 minutes while stirring occasionally.
Once done, remove the chicken hearts from the pot using a slotted spoon and discard the bones.
Serve immediately with crusty bread.
