Ingredients

  • 1 pound Shrimp
  • 3 1/2 teaspoons lemon juice
  • 2 tablespoons olive oil
  • 1 tomato
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons parsley

Instructions

  • Large saucepan of salted water should be brought to a boil. Back to a boil after adding the shrimp and covering. Boil the shrimp for another 1 to 2 minutes, slightly covered, until they are just done. Drain. Peel the shrimp after allowing them to cool.
  • Combine the tomato, olive oil, salt, pepper, parsley, and lemon juice in a sizable glass or stainless steel bowl. Toss in the shrimp after adding.
