For about 30 minutes, soak potato strips in a sizable dish of water. Use paper towels to pat until completely dry.
To 275 degrees F, heat the oil in a deep fryer or large saucepan (135 degrees C). Gently add the potatoes to the hot oil, tossing and flipping them once or twice throughout the next five minutes of frying. Transfer potatoes to a dish covered with paper towels using a slotted spoon. Allow to totally cool.
Oil should once more be heated to 350 degrees F. (175 degrees C). Add the potatoes and cook for an additional 5 to 6 minutes, or until golden brown.
Take out of the deep fryer and pat dry with paper towels. When serving, season with salt.
