Ingredients

  • 1 lb. lean ground beef
  • 1 1 ounce packet taco seasoning
  • 1 ½ cups refried beans
  • ¾ cup corn kernels
  • 3 cups cooked rice
  • 6 large flour tortillas
  • 1 ½ cups shredded cheddar cheese

Instructions

  • Set the oven to 350° F. Cooking spray a 9 x 13-inch baking dish, then set it aside.
  • Follow the directions on the seasoning package when cooking beef with taco seasoning mix.
  • To make one burrito: Toppings should include steak, 2 tablespoons corn, 1 cup cheese, and 12 cup rice. Spread 14 cup beans down the center of the tortillas.
  • Each tortilla is folded in on the opposing sides before being rolled up burrito-style. Place in the prepared dish, seam-sides down. To make a total of 6 burritos, repeat the process with the remaining ingredients.
  • Bake for 25 minutes with a foil cover (until heated through). It will take about 30-35 minutes for the burritos to fully reheat if you bake them straight from the refrigerator.
