Ingredients

  • 1 1/4 lbs ripe Roma tomatoes
  • 1 can petite diced tomatoes
  • 2 onions
  • 1/3 cup chopped red onion
  • 1 jalapeno pepper
  • 1/3 cup fresh cilantro
  • 1 clove garlic
  • 2 Tbsp fresh lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp granulated sugar
  • Salt and pepper

Instructions

  • All ingredients should be combined in a food processor and pulsed in short bursts until finely minced.
  • Add tortilla chips to the dish. It should be noted that salsa always tastes best after being chilled for a few hours, so if you have time, marinate the ingredients together before serving.
  • Keep chilled for up to a week.
