Ingredients

  • 2 lbs. Veal Cutlets
  • 3 eggs
  • 1/4 cup milk
  • 2 cups Italian Semolina plain bread crumbs
  • 1 cup grated Pecorino Romano cheese
  • 1 tsp. garlic powder
  • a handful fresh parsley
  • 1/2 cup canola oil or vegetable oil

Instructions

  • First, rinse the parsley, then finely cut it and set it aside.
  • a single bowl. Combine milk and eggs in a bowl. Place aside.
  • Combine bread crumbs, pecorino cheese, garlic powder, and parsley in a separate bowl.
  • For simple preparation, place the bowls side by side, next to one another.
  • Each veal cutlet should be dipped into the egg mixture and both sides coated. Once each piece has been coated uniformly on both sides, dip it into the bread crumbs mixture. Continue until all of the veal cutlets are done by placing each breaded one onto a plate. Place aside.
  • sanitize your hands.
  • Prepare a sizable dish and place it next to the burner, covering it with two sheets of paper towels.
  • Meanwhile, heat oil over a high flame in a deep frying pan. Reduce the heat to medium-low after the oil is HOT, then carefully add a few veal cutlets. Avoid adding too many cutlets, since this will cause the oil to cool and lengthen the cooking process.
  • Cutlets should be fried for about a minute on each side or until golden brown. The veal cooks quickly because it is so thin, so there is no need to overfry them.
  • Drain onto paper towels after taking out of the oil. Keep going until all cutlets are finished. Serve cutlets after placing them on a serving plate.
  • serves 6–8 people
