Pan-Fried Sand Dabs

Sand dabs, like other flaky white fish, fry beautifully. Serve with French fries and lemon wedges for a traditional fish and chips meal.

Ingredients

  • 2 pounds sand dabs
  • 1 egg
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter

Instructions

  • Clean sand dabs
  • Crack egg into a bowl, whisked with a fork until beaten.
  • In a mixing bowl, combine panko breadcrumbs or plain dried breadcrumbs. Season with salt and pepper to taste.
  • Dip the sand dabs into the beaten egg, then into the breadcrumbs, thoroughly coating the fish.
  • In a large skillet, melt butter. Fry the fish in the skillet on both sides until golden brown.
