Equipment

  • the waffle iron

Ingredients

  • 2 eggs
  • 2 cups buttermilk
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 6 tablespoons soft shortening
  • 3 eggs
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup soft shortening

Instructions

  • Warm the waffle iron. Before adding the batter for each waffle, waffle irons without a nonstick coating may need to be coated with vegetable oil or sprayed with cooking spray.
  • Eggs should be fluffyly beaten in a large bowl using a wire whisk. Just till smooth, add the additional ingredients, excluding the berries.
  • Pour little less than 3/4 cup of batter into the waffle iron's middle while it's hot. (The recommended amount of batter can be found in the manufacturer's instructions.) Cover the waffle maker's cover.
  • Up until the steaming stops, bake for around 5 minutes. Take waffle out with care. Serve right away. Add fresh berries on top. Use the leftover batter to repeat.
