Ingredients

  • 1 tablespoon olive oil
  • 4 large eggs
  • Kosher salt and freshly ground black pepper
  • 1 16- ounce tube refrigerated buttermilk biscuits
  • 8 slices cheddar cheese

Instructions

  • Waffle iron should be preheated to medium-high heat. Waffle iron's top and bottom should be lightly oiled or coated with nonstick spray.
  • Over medium-high heat, warm up the olive oil in a big skillet. Add the bell peppers and sauté them for 3 to 4 minutes, stirring periodically, until they are soft.
  • Add the eggs to the skillet and whisk them until they just start to set. Taste-test and add salt and pepper as desired. Cook for an additional 3 to 5 minutes, or until the mixture has thickened and the liquid egg has completely disappeared.
  • 8 biscuits should be divided, with each biscuit being cut in half lengthwise to make 16 pieces.
  • Place the biscuit halves into the waffle iron in batches. Add cheese slices, egg mixture, and another biscuit half on top. Close carefully and cook for 3–4 minutes, or until golden and crisp.
  • Serve right away.
