Waffle iron should be preheated to medium-high heat. Waffle iron's top and bottom should be lightly oiled or coated with nonstick spray.
Over medium-high heat, warm up the olive oil in a big skillet. Add the bell peppers and sauté them for 3 to 4 minutes, stirring periodically, until they are soft.
Add the eggs to the skillet and whisk them until they just start to set. Taste-test and add salt and pepper as desired. Cook for an additional 3 to 5 minutes, or until the mixture has thickened and the liquid egg has completely disappeared.
