Jicama Wrap

- 1 medium Jicama about 1 1/2 lb
- 1 1/2 tbsp Olive oil
- Sea salt
- Cumin optional
- Paprika optional
Using a peeler or knife, peel the jicama. Trim the ends to make them wide and flat.
Using a mandolin, thinly slice the jicama into tortillas. (The thinnest setting, or something close to it, is usually the best.)
Brush the tortillas with olive oil on both sides. On both sides, lightly season with sea salt, cumin, and paprika, if using.
Melt butter in a frying pan over medium heat. Heat the tortillas for about a minute per side, or until warm and slightly softened.
