Preheat the oven to 400°F if using. Use parchment paper to line baking sheets.
In a medium mixing bowl, combine vanilla pudding, cake mix, milk, and vanilla extract until smooth. Place aside.
In a large mixing bowl, beat the cream cheese with an electric mixer until light and fluffy. Blend the pudding mix into the cream cheese until well combined.
Unroll each pie crust gently and cut off the rounded edges to make one large square. To make a large rectangle, cut each square in half. Fold the dough over and spoon the filling into the center of each square. Press a fork along each side of the edges to seal them.
In a small mixing bowl, combine the egg and water. Brush the tops of each pie with the egg wash. This will ensure that your pies are golden brown!
OVEN: Place pies on a baking sheet lined with parchment paper. 13 to 15 minutes, or until golden brown.
AIR FRYER: Coat your air fryer with cooking spray and cook two pies at a time. Air fry for 10 minutes at 350°F. Rep with the remaining pies.
In a small mixing bowl, combine the powdered sugar and 2 tablespoons of milk. You want a thick glaze, but you may need to add another tablespoon of milk to make it drizzle-able.
Drizzle glaze over each pie and top with sprinkles. Serve!
