The vegetable oil should be heated over medium heat in a medium frying pan.
Add the garlic and turmeric after the onions have been sautéed for two minutes. Once the onions are tender and transparent, continue to sauté them. Place aside.
Bring three cups of water to a rolling boil in a medium saucepan. Include the lima beans, carrot, sauteed onions and garlic, italian seasoning, salt, and pepper.
The lima beans should be brought to a boil, then simmer for 40 minutes with the lid on over low heat. Continue cooking and checking the beans every 5 to 10 minutes if they are still firm until they are soft and tender.
After removing the pan from the heat, leave it alone for 20 minutes (still covered).
Reheat for serving. Add more salt, pepper or italian seasoning to taste.
