This truffle mushroom pasta appears and sounds fancy, but it is a simple pasta dish that takes about 30 minutes to prepare. The pasta is tossed with meaty mushrooms and topped with a creamy truffle cheese sauce. It looks fancy but is extremely simple to make.
Cook the pasta according to the package directions. Before draining the cooked pasta, save a few tablespoons of the starchy water.
Melt 1 tablespoon butter in a 10-inch skillet over medium heat. Stir in the mushrooms and garlic to coat them in the butter. Cook the mushrooms for 10 minutes, or until they have released their moisture and are a deep brown color.
Place the cooked mushrooms and garlic in a bowl or on a plate. Melt the 2 tablespoons butter in the same pan. Stir in the cream to combine it with the butter. When the cream is thoroughly heated, add the shredded cheese. Stir until the cheese is completely melted. To thin the sauce, add one or two tablespoons of pasta water.
Stir in the mushrooms and pasta to coat them evenly in the sauce. Serve garnished with chopped parsley and grated cheese.
