In a large mixing bowl, combine the olive oil, salt, lemon juice, oregano, black pepper, garlic powder, and paprika. To combine, stir everything together thoroughly.
Add the peeled and deveined shrimp and coat thoroughly. Place in the refrigerator for 30 minutes, covered (no more than 1 hour).
Thread the shrimp onto skewers and cook for about 3 minutes per side over medium-high heat. This can be done on the grill or in a grill pan.
Remove from the heat and serve with lemon wedges and chopped parsley over seasoned rice.
