Ingredients

  • 500 g potatoes
  • 1 tbsp olive oil
  • ½ tsp paprika
  • 120 g boneless salmon fillets
  • 2 large vine tomatoes
  • ½ small red onion
  • 1 avocado
  • 1 red chilli
  • 28 g pack fresh coriander
  • 2 limes

Instructions

  • Set the oven's temperature to 200°C, fan 220°C, gas 7. Toss the potatoes with half the paprika and the oil. On a sizable nonstick baking tray, season and spread out in a single layer. Bake for 20 minutes, rotating the pan halfway through.
  • On top of the potatoes, arrange the salmon fillets and season with the remaining paprika. Together, bake for 10 minutes.
  • Make the salsa in the interim. In a bowl, combine the tomatoes, red onion, avocado, chili, coriander, and lime juice. Season.
  • After taking the salmon and potatoes out of the oven, top with the salsa. Extra lime wedges should be served.
