Pour the coconut milk into a saucepan and heat to a boil. For 10 minutes, continually whisk while adding the sugar. Add the grated coconut that has been roasted and simmer for 5 minutes. Once the vanilla extract and toasted rice flour have been added, heat the mixture for 40 to 1 hour, or until it gets extremely thick while folding.
Take the mixture out of the saucepan and let it cool.Dust a flat surface with the toasted sweet rice flour.Roll each portion of the mixture over the sweet rice flour until it takes on the shape of a cylinder.Slice to your preferred thickness.
Wrap in paper or a banana leaf, or place on a serving platter. Enjoy!
