1cupsalted butter at room temperature, cut in small pieces
1cupsugar
2eggs at room temperature
2cupsflour
2teaspoonvanilla sugar or vanilla extract
2teaspoonbaking powder
1cupmilk at room temperature
Instructions
Set your oven to 400°F (200°C) and line a muffin tin or baking sheet with muffin liners.
In a large mixing bowl, combine the room temperature butter and sugar and beat until fluffy.
Mix in the eggs thoroughly.
In a separate bowl, combine all of the dry ingredients: flour, vanilla extract, and baking powder. Then add it to the egg, butter, and sugar mixture and stir just until combined.
Mix in the milk until it is smooth.
Scoop the batter into the muffin liners with two spoons. Fill them no more than 34 full because they will rise.
Bake the muffins for 16-20 minutes in the lower third of the oven. When they are done, a cake tester or tooth pick should come out with no or very little cake batter. Enjoy!
