Ingredients

  • 1 cup salted butter at room temperature, cut in small pieces
  • 1 cup sugar
  • 2 eggs at room temperature
  • 2 cups flour
  • 2 teaspoon vanilla sugar or vanilla extract
  • 2 teaspoon baking powder
  • 1 cup milk at room temperature

Instructions

  • Set your oven to 400°F (200°C) and line a muffin tin or baking sheet with muffin liners.
  • In a large mixing bowl, combine the room temperature butter and sugar and beat until fluffy.
  • Mix in the eggs thoroughly.
  • In a separate bowl, combine all of the dry ingredients: flour, vanilla extract, and baking powder. Then add it to the egg, butter, and sugar mixture and stir just until combined.
  • Mix in the milk until it is smooth.
  • Scoop the batter into the muffin liners with two spoons. Fill them no more than 34 full because they will rise.
  • Bake the muffins for 16-20 minutes in the lower third of the oven. When they are done, a cake tester or tooth pick should come out with no or very little cake batter. Enjoy!
