Ingredients

Tlayuda Recipe Ingredients

  • 2 Tlayudas or large corn tortillas
  • 3.5 ounces quesillo or Oaxaca cheese Half cup for each tlayuda. You can substitute Oaxaca cheese with a “low moisture” mozzarella cheese.

Meats

  • 2 Mexican chorizo sausages Large you can substitute with any meat of your choice.

Refried Beans

  • 16 ounces Black Beans Refried
  • 2 tablespoons Avocado oil Ghee or Lard (chorizo drippings)
  • 1 white onion diced
  • 1 garlic clove
  • 6 avocado leaves or hora de aguacate

Garnishes

  • 2 Radishes sliced
  • 1 Lime
  • Mexican green or red salsa
  • Cilantro

Instructions

Beans in Refried Sauce

  • Toast the avocado leaves on the griddle for a few minutes.
  • In a frying pan over medium-low heat, heat the oil.
  • Begin frying the onions until they are transparent and beginning to brown.
  • Add the garlic and fry it briefly.
  • Mash the beans until they form a paste, or use a blender.
  • Drizzle with chorizo.
  • Add the crumbled avocado leaves.
  • Taste to see if they require salt.
  • Place a tortilla on the griddle.
  • Cover the tortilla with refried beans.
  • Serve the tlayuda with quesillo or Oaxaca cheese on top.
  • Add strips of chile de agua or bell peppers if desired.
  • Add avocado slices if desired.

Meat

  • Cook your meat according to the package directions.
  • Cook Mexican chorizo sausages on medium heat for 5 - 7 minutes, or until brown.

Putting together the Tlayudas Oaxaca

  • On a griddle, warm the tortilla.
  • On the tortillas, spread the refried bean paste.
  • On the tortillas, spread the Oaxaca quesillo cheese.
  • Optional: As an alternative, substitute chile de agua pepper slices or bell pepper strips.
  • Optionally, add slices of avocado, shredded cabbage, or tomatoes. You can eat your tlayuda either open-faced or folded in half.
  • Warm your tlayuda for a few minutes on a griddle or in a pan.
  • Top or stuff your tlayudas with chorizo.
  • Serve immediately and enjoy while still warm.
