Sweetbreads

- 1 pound beef sweetbreads
- 1 cup oil for frying
- ½ cup all-purpose flour
- salt and pepper to taste
Cut sweetbreads into 1-inch pieces. Remove any stringy ligaments that are holding them together, rinsing as you go. Drain in a sink-mounted colander.
In a large saucepan, heat 1/2 inch oil to 350 degrees F. (175 degrees C).
In a mixing bowl, combine the flour and baking powder. Coat the slightly wet sweetbreads in flour.
Fry coated sweetbreads until golden brown in hot oil, turning once. Drain on a plate lined with paper towels. Season with salt and pepper to taste.
