Ingredients

  • 3 Potatoes
  • 3 Carrots
  • Olive Oil
  • Salt
  • Pepper

Instructions

  • Wash the carrots and potatoes. The carrots should then be peeled if necessary. You can leave the potatoes peeled or unpeeled. Cut the potatoes into chunks and place them in a large mixing bowl. Then, if necessary, cut the carrots and add them to the potatoes in the bowl.
  • Drizzle olive oil over the potatoes and carrots, then season with salt and pepper to taste. Toss everything together until evenly coated in the oil and seasonings. Use as much or as little oil and seasoning as you want.
  • Place the potatoes and carrots in the air fryer basket and cook for 25 minutes at 400°F. Then, about 12 minutes into cooking, remove the air fryer basket and shake it to ensure that everything cooks evenly. You can also flip the potatoes and carrots with a spatula. Then, return the basket to the air fryer to finish cooking.
  • Remove the roasted potatoes and carrots from the basket and serve!
