Set aside the potatoes after shredding them using a grater.
Put the potatoes in a small dish of water and soak them in cold water for about 30 minutes to eliminate the starches.
Drain the potatoes and then squeeze out and remove any extra water with a cheesecloth or sturdy paper towel.
Combine the shredded potatoes, egg, flour, green onion, salt, and pepper in a medium mixing basin. Combine thoroughly.
Using a cookie scoop (or about 2 tablespoons), scoop the potato mixture into a single layer into the preheated air fryer basket. Tops should be sprayed with olive oil.
Air fry Potato Fritters for 10-12 minutes at 350 degrees Fahrenheit, or until golden brown on top.
Let the fritters to cool for a minute before taking them from the air fryer basket and serving with your preferred dipping sauces.
