Ingredients

  • 2 large Russet potatoes
  • 3 Tablespoons all purpose flour
  • 1 cup green onions
  • 1 egg whisked
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon olive oil to spray tops of fritters

Instructions

  • Set aside the potatoes after shredding them using a grater.
  • Put the potatoes in a small dish of water and soak them in cold water for about 30 minutes to eliminate the starches.
  • Drain the potatoes and then squeeze out and remove any extra water with a cheesecloth or sturdy paper towel.
  • Combine the shredded potatoes, egg, flour, green onion, salt, and pepper in a medium mixing basin. Combine thoroughly.
  • Using a cookie scoop (or about 2 tablespoons), scoop the potato mixture into a single layer into the preheated air fryer basket. Tops should be sprayed with olive oil.
  • Air fry Potato Fritters for 10-12 minutes at 350 degrees Fahrenheit, or until golden brown on top.
  • Let the fritters to cool for a minute before taking them from the air fryer basket and serving with your preferred dipping sauces.
