You should put potatoes in a big pan. Add some salt and water to the top. Bring to a boil, then simmer for 15 minutes, until cooked, with the heat reduced to medium-high. Drain. Over low heat, add the potatoes back to the pan and quickly toss to completely dry them. Chill a little, then divide in half. Combine the other ingredients in a sizable bowl with the warm potatoes. Season to taste and serve.
