Ingredients

  • 1 teaspoon of baking soda
  • ½ cup of sugar
  • 2 tablespoons of corn syrup
  • 2 tablespoons of water
  • 1 tablespoon of honey

Instructions

  • To make this honeycomb candy recipe, you'll need to first line a baking dish with parchment paper and measure out baking soda in a small bowl. Make sure to have a heat-proof spatula ready before you begin.
  • Next, in a saucepan with a candy thermometer attached, whisk together sugar, corn syrup, water, and honey. Heat the mixture over medium heat until it becomes thinner but still cloudy. Allow it to bubble until it becomes clear and the thermometer registers 300 degrees F (149 degrees C).
  • Remove the saucepan from heat and whisk in the baking soda until just incorporated. Then, using a spatula, pour the mixture very carefully into the lined dish. Be careful not to spread it out with your spatula or compress the mixture at all, as this can cause the bubbles to deflate. Allow it to cool completely, which should take at least 30 minutes.
  • Once cooled, remove the candy from the pan by lifting out the parchment paper. Tap it against the counter and use your fingers to break it into individual pieces.
