Ingredients

  • 3 Tbs. rice vinegar
  • 1 Tbs. honey
  • 1 Tbs. ginger root finely chopped peeled
  • 2 garlic cloves finely minced
  • 3 tsp. matcha powder
  • 2 tsp. tamari
  • 4 Tbs. sesame oil light not toasted
  • 2 cups broccoli sprouts packed
  • 2 cups baby spinach leaves packed, shredded or chopped small
  • 1 medium carrot cut into thin matchsticks
  • 1 small celery stalk very thinly sliced on the diagonal
  • 1/2 small red onion thinly sliced
  • 1/2 cup sugar snap peas thinly sliced on the diagonal
  • 1/4 cup cashews toasted
  • 1/4 cup goji berries
  • 2 Tbs. black sesame seeds

Instructions

  • In a small mixing bowl, combine rice vinegar, honey, ginger, garlic, matcha powder, and tamari until thoroughly combined. Mix with the sesame oil. Season with salt and white pepper to taste. Set aside.
  • Combine broccoli sprouts, baby spinach, carrots, celery, red onion, and sugar snap peas in a medium mixing basin. Toss salad with just enough dressing to gently cover it, then toss to combine. Toss in the cashews, goji berries, and black sesame seeds. Divide the salad into four bowls and serve immediately.
