¾cup60 g radicchio leaves, thinly sliced, plus extra leaves for serving
6fresh rosemary leaves
1tbsp15 ml lemon juice

2oz60 ml distilled non-alcoholic gin
1oz30 ml radicchio syrup, chilled
1oz30 ml lemon juice
A few ice cubes
2 ½oz75 ml cold tonic water
Instructions
Radicchio Syrup
Bring the water and sugar to a boil in a small pot. Get rid of the heat. Lemon juice, rosemary, and radicchio are added. Give it 20 minutes to sit. After straining, let the syrup cool. Compost the rosemary and radicchio. Keep the syrup cold.
Mocktail
Combine the non-alcoholic gin, chilled radicchio syrup, and lemon juice in a large glass. Mix. Put a few ice cubes, then pour tonic water on top. If desired, garnish with long radicchio leaf wedges.
