Ingredients

  • Radicchio Syrup
  • ½ cup 125 ml water
  • ½ cup 105 g sugar
  • ¾ cup 60 g radicchio leaves, thinly sliced, plus extra leaves for serving
  • 6 fresh rosemary leaves
  • 1 tbsp 15 ml lemon juice
  • Mocktail
  • 2 oz 60 ml distilled non-alcoholic gin
  • 1 oz 30 ml radicchio syrup, chilled
  • 1 oz 30 ml lemon juice
  • A few ice cubes
  • 2 ½ oz 75 ml cold tonic water

Instructions

Radicchio Syrup

  • Bring the water and sugar to a boil in a small pot. Get rid of the heat. Lemon juice, rosemary, and radicchio are added. Give it 20 minutes to sit. After straining, let the syrup cool. Compost the rosemary and radicchio. Keep the syrup cold.

Mocktail

  • Combine the non-alcoholic gin, chilled radicchio syrup, and lemon juice in a large glass. Mix. Put a few ice cubes, then pour tonic water on top. If desired, garnish with long radicchio leaf wedges.
