- 3.3 lb silverside
- 1 onion
- 1 carrot
- 10 peppercorns
- 6 cloves
- 2 bay leaves
- ¼ cup brown sugar
- ½ cup malt vinegar
In a sizable, deep saucepan, add the beef. Add the remaining ingredients and then cover the steak with water.
Turn the heat up to high and bring the saucepan to a boil.
Once it has boiled, turn down the heat to a low simmer. Maintain a simmer while cooking for two hours under cover.
After removing the beef from the liquid, give it 15 minutes to rest.
