Ingredients

  • 3.3 lb silverside
  • 1 onion
  • 1 carrot
  • 10 peppercorns
  • 6 cloves
  • 2 bay leaves
  • ¼ cup brown sugar
  • ½ cup malt vinegar

Instructions

  • In a sizable, deep saucepan, add the beef. Add the remaining ingredients and then cover the steak with water.
  • Turn the heat up to high and bring the saucepan to a boil.
  • Once it has boiled, turn down the heat to a low simmer. Maintain a simmer while cooking for two hours under cover.
  • After removing the beef from the liquid, give it 15 minutes to rest.
  • Serve and savor.
