Ingredients

  • 1 cup rice
  • 2 tsp vegetable oil
  • 2 eggs lightly whisked
  • 2 Eggs
  • 1 carrot
  • 2 shallots trimmed, finely sliced
  • 1/2 cup peas
  • 1 tbsp soy sauce
  • Sesame seeds

Instructions

  • For 12 minutes or until soft, cook the rice in a big pot of boiling water. Drain, then allow to cool.
  • Over medium heat, preheat the oil in a large nonstick frying pan or wok. Put eggs in. Form an omelette by swirling over the base. Cook till set after 2 minutes. Move to a cutting board. Place aside to gently cool. Shorten into strips.
  • Wok with eggs added. Cook for 4 minutes or until golden. the carrot 1 minute of stir-frying Add the rice, peas, and shallots. Cook for 3–4 minutes while stirring. Add soy sauce and an egg. Stir constantly until fully warmed. Sesame seeds should be added as well as additional shallots on top. Serve right away.
