Get a large knife and cut the pineapple vertically into equal halves starting in the middle.
Employ a pairing knife (small pointy knife). Cut 1 inch deep and 1/2 inch apart, being careful not to cut through the skin completely. They therefore don't leak.
Slice the pineapple, then remove the chunks using a spoon and place them in a different bowl.
Find and remove the pineapple hardcore cut from the chunks that were scooped.
Eliminate any extra juice. On some paper towels, dry the pineapple. Turn upside-down to drain any leftover liquids.
