Air Fryer Pancakes

They are more convenient than cooking on a stove or griddle. It's not even necessary to flip them!

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 2-3 teaspoons granulated sugar
  • ¼ teaspoon kosher salt
  • 1 large egg
  • 1 ½ cups buttermilk or regular milk
  • 2 tablespoons unsalted butter melted and slightly cooled

Instructions

  • Combine the flour, baking powder, sugar, and salt in a mixing bowl. Whisk everything together, then make a well in the center of the dry ingredients.
  • In a separate bowl, whisk together the egg, milk, and melted butter.
  • Gently fold in the wet mixture until just combined, leaving a few lumps behind.
  • Allow 5 minutes for the batter to rest. Meanwhile, close your air fryer basket and preheat it to 360 degrees F with a 6-inch cake pan.
  • Spray the cake pan liberally with cooking spray before placing it in the air fryer. Drop a 12 cup of batter into the cake pan with an ice cream scoop and gently spread batter to the pan's edges with a rubber spatula.
  • No need to flip! Air fry for 6 to 8 minutes, or until pancakes are golden brown on top. Continue with the remaining batter, keeping the cooked pancakes on a baking sheet in a 200°F oven until ready to serve.
