Berries And Cream

- 1 c raspberries
- 1 c blackberries
- 1 c blueberries
- 1 v strawberries
- ½ c sugar
- Handful of fresh mint leaves julienned
- 2 tbl Grand Marnier
Cream:
- 1 c heavy whipping cream
- ¼ c powdered sugar
Sprinkle 12 cup sugar over all berries in a large mixing bowl and set aside for an hour or so.
How to Make Caramel Dust:
Using a Silpat or cooking spray, line a rimmed baking sheet.
Bring sugar to a boil over medium heat.
Swirl (do not stir) the sugar in a pan over high heat until it dissolves, then cook until it turns a caramel color, being careful not to burn.
Pour onto a prepared baking sheet and allow to harden for 1 hour before breaking into shards.
Put all ingredients in a food processor and pulse until finely ground, then pass through a sieve to make dust.
Whip cream and powdered sugar to medium peaks.
To the berries, add mint and two tablespoons Grand Marnier.
Place the berries in a serving bowl, top with the cream, and dust with sugar!
