Ingredients

  • 1/4 cup cold water
  • 1.5 tbsp powdered gelatin
  • 3/4 cup coconut milk canned
  • 3/4 cup cream of coconut
  • pinch salt
  • 1.5 cups heavy whipping cream
  • 2 tbsp white sugar

Instructions

  • Fill a small basin with the cold water. To the cold water, add the gelatin. Place aside and give it five minutes to sit.
  • Heat the coconut milk, coconut cream, and a dash of salt in a small saucepan. Heat without bubbling until just warm.
  • When all the gelatin has been dissolved, add it to the warm coconut milk and mix. Let to cool to room temperature and set aside.
  • Pour the heavy whipping cream and white sugar into a medium mixing bowl. Stir at a medium speed until soft peaks and whipped cream are light and fluffy.Gently incorporate the whipped cream with the cooled coconut mixture.
  • Fill jars or small containers with the mixture. Place in the fridge after sealing. Set aside for at least four hours to cool and set.
