Hennessy Wings Recipe

You’ve probably heard of Buffalo wings, but did you know there was another kind?

This other kind is called “Hennessy Wings” – this wing-shaped appetizer has its origins in New Orleans.

The name comes from the brand of cognac used to create it (Hennessy) as well as the fact that the wings were traditionally deep-fried before being coated in a spicy cocktail known as Rémoulade Sauce.

If you like spicy food or want something different to eat on your next barbecue, these wings will be right up your alley!

What Are The Ingredients For Hennessy Wings?

The classic version of Hennessy wings uses a mixture of ingredients including garlic, onion, celery, salt and pepper, along with some herbs such as thyme, oregano and rosemary.

However, if you can’t find any of those items in your local grocery store, don’t worry.

You can easily recreate them by using common spices instead.

  • 1/4 cup paprika
  • 3 tablespoons chili powder
  • 2 teaspoons cayenne pepper
  • 1 teaspoon ground black pepper
  • 1 tablespoon granulated sugar
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon dried basil
  • 1 tablespoon dried thyme

To prepare the wings:

  • Cut each wing into two pieces so they resemble the shape of a wingtip.
  • Season each piece of wing with 1/4 teaspoon of salt and 1/8 teaspoon of freshly ground black pepper. Place the seasoned wing pieces onto a sheet pan lined with parchment paper, cover with plastic wrap and refrigerate overnight.
  • When ready to cook, preheat an oven to 375 degrees Fahrenheit (190 Celsius).
  • In a large bowl combine all of the remaining ingredients until thoroughly mixed together.
  • Remove the chilled wing pieces from the refrigerator and toss them in the spice mix. Make sure to coat both sides evenly.
  • Fry the wings in hot oil over medium heat for about 3 minutes per side until golden brown.
  • Place the cooked wings on top of a baking rack or tray placed directly on the countertop while cooking.
  • Once cooled, serve the wings warm with Rémoulade Dipping Sauce below.

How Do You Make Hennessy Wings?

To get started, all you need to do is buy some chicken wings at any grocery store near you.

You can use either boneless or bone-in wings, depending on what you prefer.

It’s also important to note that if you don’t have access to Hennessy cognac, you can always substitute with any good quality cognac instead.

After buying your wings, wash them thoroughly under cold water and pat dry with paper towels.

Next, cut off the tips of each wing so they fit into a plastic bag without touching one another.

Make sure you keep track of how many wings you have because once the rest of the steps begin, you won’t be able to add more wings after cutting them off.

Now take out two large Ziploc bags and place one inside the second one.

In the first bag, pour about 1/4 cup of melted butter (or margarine), 2 tablespoons of paprika, 1 tablespoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and a pinch of black pepper.

Place the second bag over the top of the first one to prevent the contents from spilling out during mixing.

When everything is mixed together, put the entire mixture into a bowl big enough to hold six cups of flour.

Mix the mixture until it becomes a thick paste.

Once the dough starts to form, remove it from the bowl and knead it until it is smooth and elastic.

Continue doing this process until the dough no longer sticks to your hands.

Divide the dough into 12 equal parts by using a scale or measuring spoon.

Each part should weigh approximately 50 grams.

Now roll each piece of dough between your palms to form long strands.

Keep rolling until the strands reach an approximate diameter of half an inch.

Next, lay out two pieces of parchment paper on the countertop and divide each sheet into four sections.

Divide each section into three strips, which means you now have nine strips total.

Take the middle strip and fold it lengthwise in thirds towards the center.

Then, open it back up so you have a rectangle shape.

Repeat this step with the remaining eight strips.

Now, take a small handful of the mixture and press it down onto the folded end of one of the nine strips.

Press gently until you see the edges start to stick together.

Add a little bit more mixture and repeat until you have covered the whole surface area of the strip.

Now, take the other seven strips and stack them one atop the other horizontally across the width of the folded strip.

As you continue stacking the strips, start folding the edge of the bottom layer upwards along the sides of the stacked layers.

When you arrive at the point where the last strip meets the first strip, flip the folded ends over to close the sandwich completely.

Once you’re done making the sandwiches, transfer them to a baking tray lined with aluminum foil.

Use a pair of scissors to snip off the excess stringy bits of dough left behind when you rolled out the strips.

Heat up a deep fryer filled with oil to 375°F.

After 15 minutes, carefully drop one of the prepared sandwiches into the hot oil and let it cook for 3 minutes per side.

Remove the cooked sandwich from the frying basket and drain it by placing it on a wire rack placed over a plate or tray.

Repeat this process with the remaining eight sandwiches.

While the breading and frying are both taking place, heat up a saucepan over medium heat.

Pour in 1/3 cup of white vinegar and add 1/4 cup of sugar.

While stirring constantly, bring the mixture to a boil and allow it to reduce by half.

Turn off the heat and stir in 1/2 cup of ketchup, 2 teaspoons of mustard, 1 teaspoon of Worcestershire sauce, 1/8 teaspoon of cayenne pepper, and 1/16 teaspoon of ground cloves.

Stir vigorously until all of the ingredients become combined.

Remove the saucepan from the stove and set aside to cool slightly.

Transfer the cooled sauce to a bottle with a screw cap and refrigerate until ready to serve.

What Is The Best Way To Cook Hennessy Wings?

To fry them, you need to use an oil that is high enough to reach 375oF/190oC.

You also need plenty of space to fry the wings without having them touch one another.

A large wok or heavy frying pan works great since they can get really hot, so don’t try to fit too many into your small kitchen appliance.

If you don’t own any woks or frying pans, you can simply place the wings onto a baking sheet lined with paper towels.

Just remember to keep them away from each other because if they stick together while cooking, they won’t turn out crispier.

Once all of the wings are arranged in a single layer, add some vegetable oil to the pot and heat at medium-high until the temperature reaches 375oF/190oC.

After about 10 minutes, check the temperature again by placing a thermometer into the oil.

It should read between 350oF/180oC and 365oF/185oC.

Now, take a few more minutes to let the oil cool down.

When it does, carefully remove the wings from the pot using tongs and transfer them to a separate container.

Make sure not to drop them back into the oil when transferring them, or else the wings will soak up extra fat during their trip from the pot to the plate.

Next, prepare your spice mixture.

Combine equal parts paprika, chili powder, ground cayenne pepper, garlic salt, onion powder, black pepper, lemon juice, Worcestershire sauce, and white vinegar in a bowl.

Whisk everything together thoroughly.

Now, add half of this mixture to the remaining ingredients and mix it well.

Add the other half once the first batch has cooled completely.

Use a rubber spatula to scrape every last bit of seasoning off the bottom of the bowl and stir it into the mixture.

Finally, pour some of this mixture over the wings in a plastic storage bag.

Allow the wings to sit in the fridge overnight, then drain them completely.

Place the wings on a wire rack set over a baking tray to catch excess grease.

Pour some vegetable oil into a shallow metal pan and heat at medium-low until the temperature reaches 280oF/135oC.

Once the oil has reached this temperature, place the wings in the oil and fry them for 3 to 5 minutes per side.

They should be golden brown on both sides.

Remove the wings with tongs and arrange them on a clean wire rack to finish cooling.

Serve immediately.

What Is The Nutritional Value Of Hennessy Wings?

  • 1.5 lbs Chicken Wings sectioned

Instructions

For the wings

  • Set the oven’s temperature to 425.
  • Take the chicken wing pieces out of the fridge and pat them dry (removing as much moisture as possible helps to have a crispy wing skin)
  • In a small bowl or ramekin, combine the baking powder, garlic powder, onion powder, smoked paprika, sea salt, and black pepper.
  • Toss the wings in the spice mixture to evenly coat them.
  • Put the wings on a baking sheet with parchment paper or a baking sheet with a cooling rack.
  • For 25 minutes on each side, bake the wings.

For the sauce

  • To a small saucepan, add all the ingredients. To integrate, whisk.
  • For roughly 10 minutes or until the sauce becomes a light syrup, heat on medium low.
