The stem of the plant is white, and this stem is attached to a bundle of green leaf sheafs.

The dark green section of the plant cannot be eaten. Instead, you should only eat the white and light green parts of this plant.

This does mean that the plant has to go through quite a lot of preparation before it can be eaten. 

In terms of vegetables that are similar to leeks, it is difficult to find vegetables that are similar to this unique vegetable.

However, some of the most similar vegetables include shallots, scallions, chives, onions, and garlic. 

So we know what a leek looks like, and what areas of the leek can be consumed.

What Part Of A Leek Do You Eat?

Like all vegetables, there are parts of the leek that you shouldn’t eat.

When you buy a leek, you may be put off by a large amount of wastage associated with this vegetable, and that is because you cannot eat the dark green part of the leek.

You can only eat the white stem and light green section of this plant.

When you purchase a leek to prepare, then a large amount of the vegetable will be the dark green leaves.

To eat the leek, you will need to cut the sheaf of leaves away from the white stem and discard the leaves. Once you do this, you will be able to see just how similar the leek is to an onion. 

Technically, you can eat the dark green part of the leek.

But it is incredibly tough, which is why most people only eat it when using it to make a vegetable broth.

However, most of the time, the dark green section of this plant will simply be thrown in the trash.  

How Do You Eat Leeks?

There are tons of different ways to eat leeks.

You can eat them on their own as a tasty snack, but most of the time, people will use them as an ingredient in another dish. 

Leek can be used to make a delicious soup.

Likewise, it can be added to a pasta dish to bring great depth to the flavor of the meal.

You may choose to pop it in a risotto, or simply eat it on a pizza. 

There are tons of different ways to eat leeks, and that is what makes them such great vegetables.

Easy Potato Leek Soup Recipe

  • 2 tablespoons unsalted butter
  • 2 leeks white and light green parts only, thinly sliced
  • 3 cloves garlic minced
  • 2 pounds potatoes peeled and diced
  • 4 cups low-sodium chicken
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup milk


  • Melt the butter in a large pot over medium heat. Add the sliced leeks and garlic, and cook until softened, stirring occasionally, about 5 minutes.
  • Add the diced potatoes, chicken or vegetable broth, bay leaf, salt, and black pepper to the pot. Bring the mixture to a simmer, then reduce the heat to low and cover the pot.
  • Cook the soup until the potatoes are tender, about 15 to 20 minutes.
  • Remove the bay leaf and discard it. Use an immersion blender to purée the soup until it is smooth and creamy. Alternatively, you can transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
  • If the soup is too thick, you can add milk to thin it out to your desired consistency. Adjust the seasoning with more salt and pepper, if needed.
  • Serve the soup hot with crusty bread or crackers.
