Churrasco
This traditional churrasco recipe is accompanied by a flavorful chimichurri sauce. It's quick and simple to make and full of flavor.

- 2 pounds skirt steak
- 2 teaspoons sea salt plus more to taste
- 1 teaspoon black pepper plus more to taste
- 1/2 cup olive oil
- 1/4 cup onion minced
- 2 cloves garlic minced
- 2 tablespoons red wine vinegar
- 2 tablespoons flat-leaf parsley finely chopped
- 1 tablespoon oregano minced fresh
Collect all of the ingredients.
Preheat the grill to medium-high.
Season both sides of the steaks with salt and pepper.
Strip the steaks into 2-inch strips.
Roll the skirt steak strips into coils and thread 3–4 on large metal skewers.
Cook for 4 to 5 minutes per side on the grill.
Remove the meat from the heat when it is fully cooked (internal temperature of 155 to 165 F).
While the meat is resting, make a small dish with the salt, pepper, olive oil, onion, garlic, red wine vinegar, parsley, and oregano.
Pour over the skirt steak and serve with your preferred side dishes.
