Ingredients

  • 2 pounds skirt steak
  • 2 teaspoons sea salt plus more to taste
  • 1 teaspoon black pepper plus more to taste
  • 1/2 cup olive oil
  • 1/4 cup onion minced
  • 2 cloves garlic minced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons flat-leaf parsley finely chopped
  • 1 tablespoon oregano minced fresh

Instructions

  • Collect all of the ingredients.
  • Preheat the grill to medium-high.
  • Season both sides of the steaks with salt and pepper.
  • Strip the steaks into 2-inch strips.
  • Roll the skirt steak strips into coils and thread 3–4 on large metal skewers.
  • Cook for 4 to 5 minutes per side on the grill.
  • Remove the meat from the heat when it is fully cooked (internal temperature of 155 to 165 F).
  • While the meat is resting, make a small dish with the salt, pepper, olive oil, onion, garlic, red wine vinegar, parsley, and oregano.
  • Pour over the skirt steak and serve with your preferred side dishes.
