Ingredients

  • 1 pound fresh cobia fillet
  • ¼ cup olive oil
  • ½ cup diced onions
  • 4 garlic cloves
  • ½ cup chopped cilantro leaves
  • Salt + pepper to taste
  • Cooked tortillas

Instructions

  • Preheat oven to 400 degrees Fahrenheit. Rinse the cod fillet under cold running water and pat dry with paper towel.
  • In a large skillet, add 2 tablespoons of olive oil and sauté the onion and garlic until translucent.
  • Add the remaining tablespoon of olive oil, along with the cilantro and salt and pepper to taste
  • Place the cod fillet on top of the mixture and bake uncovered for 10-15 minutes.
