Ingredients

  • 15 g Beans and legumes
  • 10 g carrots
  • Peas and other vegetables
  • 15 g Rice (brown or white)
  • 1 tbsp Vegetable oil
  • 10 g Coriander (cilantro)

Instructions

  • Step 1: Wash each vegetable (and any additional vegetables you want to use) and cut them into small pieces.
  • Step 2: Cut spring onions into thin pieces.
  • Step 3: Add the spring onions and red chili pods to a pot of water and simmer until tender.
  • Step 4: Prepare the vegetables for stir-frying by cutting off their ends and cutting them into thin strips . Some people don't like eating the ends of the vegetables because they're tough and chewy. However , you can add them back in the final dish if you prefer.
  • Step 5: In a pot of boiling water , blanch bean sprouts for about 30 seconds (until they turn bright green). Drain and set aside .
  • Step 6: Cook carrots , squash and green beans in boiling water with a pinch of salt until they're tender.
  • Step 7: Heat olive oil in another pan over medium heat . After it's heated up, add spices such as cumin , coriander and garlic powder. Stir fry the spices until aromatic before adding in the other vegetables. Cook until everything is coated with oil.
  • Step 8: In another pot, heat rice or noodle soup over medium heat . When it's ready, add salt and sugar. Then add cooked veggies , mix together thoroughly.
