Ingredients

  • 1 garlic clove
  • Kosher salt
  • 1/4 cup coarsely chopped fresh cilantro
  • 2 tablespoons extra-virgin olive oil
  • 2 ripe mangoes peeled
  • 4 scallions thinly sliced
  • 1 habanero chile
  • Juice of 2 limes
  • Tortilla chips

Instructions

  • Use the flat side of a big knife to finely chop the garlic, season with 1 1/4 teaspoons of salt, and mash into a thick paste. Combine the cilantro, oil, mango, scallions, habanero, lime juice, and garlic paste. To give the flavors a chance to mingle, set aside for at least 15 minutes. Serve with tortilla chips for scooping and more salt to taste.
