Swamp Cabbage

Swamp cabbage can be cooked in a variety of ways. The most popular way to prepare Florida Cracker is to cut it into thin slices like cole slaw and cook with meat seasoning until done, turning it from white to yellow brown. or a grayish brown. Heart of Palm Salad is served raw in slices with dates or guava.

  • 1 dutch oven

Ingredients

  • 1/2 pack bacon diced
  • 1/2 onion diced
  • 3 tbsp butter
  • 3 tbsp garlic minced
  • 1 head cabbage cubed
  • 3/4 c beef broth
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp pepper
  • 8 oz tomato sauce
  • 1/2 c hearts of palm diced

Instructions

  • Melt butter in a large pot or dutch oven over medium high heat. When the butter has melted, add the diced bacon and onion.
  • Cook until the bacon is crispy and the onions are softened. Cook for 1 minute more after adding the garlic.
  • Remove the end of the cabbage and cut it in half, then into 11" cubes. Stir the contents of the pot together. (If you want to include hearts of palm, do so now.)
  • Stir in the broth and tomato sauce. Then add in all of your seasonings. Mix everything together. Reduce the heat to low and cook for about 10 minutes, or until the leaves soften. Then cover and leave it for at least 5 minutes.
  • Serve!!
