Set the oven to 425 °F. In a large mixing dish, combine the potatoes and broccoli. Add a drizzle of olive oil and coat with a toss. Add fresh herbs that have been chopped, some salt, pepper, and garlic, and mix once more. Spread out the veggies on a large baking sheet in a single layer.
Roast the potatoes for 15 minutes, or until they are tender to the fork. (You may need to boil the baby potatoes for a little longer, maybe 20 minutes total.)Serve right now with your preferred protein or save for later for a quick side dish meal preparation.
