Ingredients

  • 4 ounce tripletail fillets
  • 4 Tbsp. butter
  • 1 garlic clove smashed
  • 4 thyme sprigs
  • Salt and pepper to taste

Instructions

  • In a saucepan, heat the oil until it is barely smoking, then add the seasoned tripletail and cook until golden. Reduce the heat and flip to finish.
  • Brush fish with butter, thyme, and garlic until cooked, then drain on a paper towel.
  • Remove the thyme and garlic, then brown the remaining butter slightly and set aside for plating.
