- 4 ounce tripletail fillets
- 4 Tbsp. butter
- 1 garlic clove smashed
- 4 thyme sprigs
- Salt and pepper to taste
In a saucepan, heat the oil until it is barely smoking, then add the seasoned tripletail and cook until golden. Reduce the heat and flip to finish.
Brush fish with butter, thyme, and garlic until cooked, then drain on a paper towel.
Remove the thyme and garlic, then brown the remaining butter slightly and set aside for plating.
