Ingredients

Dressing

  • 3 tablespoon lime juice
  • 2 tablespoon soy sauce
  • 1 clove garlic crushed or minced fine
  • 1 ½ tablespoon honey
  • ½ teaspoon sesame oil
  • 1 teaspoon rice wine vinegar

Salad

  • 3 large carrots or 4 small carrots
  • 1 scallion
  • 1 teaspoon sesame seeds

Instructions

Dressing

  • Shake the dressing to incorporate all the ingredients in a small jar with a lid.

Salad

  • Peel the carrots' skin with a vegetable peeler before slicing them into thin strips and placing them in a bowl. Peel carrots up to the core before discarding. You'll have a variety of carrot ribbon sizes depending on the size of your carrots.
  • Toss the carrots with the dressing to mix. Let the salad 5 minutes to settle so the pickles can soak up some of the dressing.
  • Add sesame seeds and scallion slices as garnish.
