Ingredients

  • 3/4 pound smoked herring
  • 3 tomatoes medium Roma ;chopped. (or one large beefsteak tomato)
  • 1/4 cup onions chopped
  • 2 cloves garlic minced
  • 2 sprigs thyme
  • 1/4 cup oil
  • 1/2 scotch bonnet chopped (with seeds for more heat)
  • water boiling; hot

Instructions

  • Use scissors to cut the fillets into smaller pieces, and then use your hands to shred the meat. removing as many bones as you can.
  • Shredded beef should be added to a medium-sized dish.
  • Take boiling water and pour it over herrings. Make sure the fish are submerged in water.
  • Let it around 10 minutes to soak. This is done to eliminate extra salt.
  • Rinse the water off and check for salt. If the fish is still too salty, add more boiling water and try again.
  • After heated, add the garlic, onions, flavor pepper, and hot pepper to the oil in the heavy saucepan. Cook for five minutes.
  • Mix the hot oil mixture with the drained, shredded fish in the bowl.
