Rocky Mountain oysters, also known as mountain oysters or meat balls in Canada (French: animelles), are a meal composed of bull testicles. After being skinned, coated in flour, pepper, and salt, and sometimes pressed flat, the organs are frequently deep-fried.
If the testicles are connected, remove the outer membrane. Cut a tiny cut through the inner membrane and peel it away to reveal the flesh.
In a small saucepan, bring the testicles and water to a simmer. Cook for 10 minutes, then remove from the heat and chill in the water.
Take the testicles and cut them into pieces about 12 inch thick.
Buttermilk
In a mixing dish, combine the buttermilk and salt, then add the testicles and marinate for at least a few hours.
Coating
Combine the coating ingredients in a dish and set aside.
Deep Frying
In a small saucepan appropriate for deep frying, heat at least 3 cups of peanut oil. When the temperature hits 350 degrees Fahrenheit, throw the fries thoroughly in the spice mixture, massaging and pressing the coating into them. Working in tiny batches, gently add the breaded fries to the heated oil.
Fry the fries until golden brown, then transfer them to a tray lined with paper towels. In a 200°F oven, keep the completed fries warm.
After all of the fries are done, immediately heat the spicy sauce with the butter and stir to combine.
Serve the fries with the sauce on the side, either on a bed of fresh greens or on a paper towel or napkin.
